I needed some tasty steak in me and decided a standard tri tip was good, but not good enough. Enter coffee rubbed tri tip. Required no marination and only took about 30 minutes to prep. It also required just 4 ingredients plus tallow!
Ingredients for 1.5 lb tri tip:
1/2 cup of ground decaf coffee beans
2 tsp salt
2 tsp garlic powder
2 Tbsp mustard
3 Tbsp tallow
Optional: Limes
Instructions:
Preheat oven to 350 degrees Farenheit.
Mix coffee grounds together with salt and garlic powder into large bowl.
Rub mustard on all sides of steak.
With tongs, roll tri tip around in coffee grind mix, fully covering all sides.
Add tallow to cast iron pan and turn flame to medium high heat.
After tallow has heated, add coffee rubbed steak to pan. Cook for 3 mins on each side while constantly moving the steak around the pan to ensure the steak is continually lubricated and the coffee does not burn.
After each side has been pan fried, place cast iron pan with steak oven for 13 minutes. Add or subtract 30 seconds to baking time for every ounce the steak is above or below 1.5 lbs (24 ounces).
After it has baked for 13 minutes, remove from oven and let sit for 10 minutes before slicing (optionally adding lime juice) and serving.
