Pizza is easy to prep and fun for the entire family. And as you know, I eat a lot of it, whenever I want, which happens to be about 10 times per month. The only problem is my Far Right Latina Girlfriend is allergic to both gluten and dairy. Years ago I assumed this would be a dietary curse, but it’s actually not. In about 15 minutes of prep time, I’m able to create these fantastic, crispy flat bread pizzas for her. They taste like dessert, to be honest, and last night I actually preferred her pizza to mine.
So here’s what you’ll need:
-Almond flour tortilla(s) - I prefer Siete brand
-3 oz goat cheese per pizza
-Olive oil & balsamic vinaigrette
-2 oz chicken breast per pizza
-Salt, pepper & garlic powder
-Parchment paper
